1 cup chocolate chips 1/2 cup butter 1/2 cup brown sugar 5 egg whites, at room temperature 5 egg yolks 2 tablespoons cocoa, sifted 1 1/4 cup ground nuts, walnuts or almonds or pecans 1 cup flax meal (optional) 1 cup coconut, shredded (optional) |

Melt chocolate chips, butter and brown sugar in a small bowl over hot water, or on low, stirring constantly, until smooth. Do not overheat. Let cool for 5 minutes. Beat in egg yolks and cocoa. Using clean beaters, beat egg whites in a large bowl until soft peaks form. Fold ¼ of whites into chocolate mixture. Fold in remaining whites. Fold in the nuts and any of the optional healthy additives. Pour into greased 9 inch springform pan. Bake in 350°F oven for 30 minutes. NOTE: There is no need to preheat the oven. |
