1/2 cup cornstarch, sifted 1/2 cup icing sugar, sifted 1 cup rice flour, softed 3/4 cup butter, softened |

In a large bowl, mix together cornstarch, icing sugar and rice flour until well blended. Add the butter and knead the dough for about 5minutes until soft. Wrap in plastic wrap and refigerate for about an hour. Preheat oven to 300°F. Remove from fridge and divide into smaller portions. Roll out flat on lightly flour surface and use cookies cutters to cut out shapes. Place on greased cookie sheet. Bake in pre-heated oven for about 20 - 25 minutes. Allow cookies to cool for about 15 minutes before removing from cookie sheet. |
